In true Dauntless spirit, as with all my other recipes, I’m sharing homemade yumminess that’s simple, delicious, and perfect for busy families who are looking for healthier eating options for their menu!
One important part of our kitchen is that we eat (relatively) clean food that’s easy to prepare. Our health is important in our home. We focus on becoming strong, not skinny. Healthy choices that are convenient, but delicious. (Meal prepping has been key for us!)
In doing this, our family has created the Ultimate Chicken Soup recipe that I want to share with you. By the way, this meal is requested several times each month during the fall and winter months, and they all want seconds!
I must add before I share all the ingredients a few reasons why I (the momma in the kitchen) absolutely love this meal for us:
- It’s a quick, easy meal that the base of the soup can be prepared in a crockpot and can be “souped up” and on our table in just a few minutes.
- The veggies can be prepped ahead (I store ours in jars) and pulled out to the table for easy prep/clean up.
- Everyone can choose his/her own additional toppings and the family meal fits us all without any grumbling or complaining!
- It’s packed FULL of veggies. (This Mom’s Favorite Part!)
The Blessings Love It!
So my sweet blessings, aka children, hands down love this recipe! Want to know how much? Check out this photo below! We were caught outside in a June rainstorm trying to catch the pig who escaped into the chicken coop! 😂 The blessings came in declaring, “We’re cold! We want chicken soup!” I immediately pulled out the leftover chicken we had grilled the night before and some chicken stock for them to start the base!
We rounded up the chopped veggies that go in the base (see below) and steamed them in the microwave to pair with the chicken and stock. We (really they) combined this all in a microwave-safe dish and their very own homemade chicken soup was made!
Seriously, Momma, they had a homemade chicken soup in less than 15 minutes. I know opening a can is easy. Giving them memories and helping them learn to create in the kitchen is priceless! You can do this.
Step 1: Make the Soup Base
4-5 chicken breasts
2 cups chopped carrots, onions, & celery
Salt, Pepper, Garlic (to taste)
Cover with Water, Cook on low 6-7 hours
Step 2: Create some Fresh Toppings
Chop ALL to taste & size
*cilantro *coleslaw mix
Step 3: Add any/all of the following to create the Ultimate Chicken Soup
*Greek Yogurt *guacamole or avocado
*onions *shredded cheddar cheese
*chips or tortillas *fresh lime juice
Step 4: Explore your own options for Add-Ins
Really, sis, this recipe is designed to be “organic” in the sense it can change and be updated based on your preferences? Love curry! Add that! Want more spice, add chili powder, red pepper flakes, and jalepeños!
