Eat More Veggies (Yes, we all know this!)
They walked by and said, “Wow, Mom! That smells delicious!” and they were right! This one-pot meal was hearty, filling, full of vegetables, and my children loved it!
One of my Top 10 Goals this year is to have a veggie (or fruit) at each meal. At the time of this post, I’ve made it 30 days in a row meeting this goal.
As a working mom, some nights I need a quick and easy meal for us. I also know that when we are busy, vegetables can be the first thing to go. I bet, dear friend, you are a bit guilty of this as well.
I’m pretty good at organizing my week before craziness happens. Menu planning and meal prepping are part of the tips and strategies I share for all mommas, but there are some weekends that our family had a little too much on the calendar and I run out of time to prep our vegetables for the week.
In a Pinch
I love frozen vegetables for nights just like this. My favorite place to shop this is Kroger’s 10 for $10 section. (This is not a paid post.)
Friend, this easy, delicious recipe is packed full of veggies and is finished in less than thirty minutes. One of my blessings even requested to take leftovers for lunch the next day! Now that’s a mom victory! 🙌🏼✨🙌🏼
1 tbsp. Olive oil
1/2 small onion (any color)
1 package Chicken Andouille (or Kielbasa) sausage
16 ounces chicken broth
16 ounces water
1 bag frozen Italian veggie mix
1 package frozen spinach
1 box bow-tie noodles
Use the following seasonings to taste!
Salt | Pepper | Garlic | Basil | Italian Seasoning
- In large wok, heat oil on medium heat.
- Add onion and sausage. Cook until onion becomes translucent (2-3 minutes).
- Add chicken broth. Let cook 2-3 minutes.
- Add frozen veggies. Cook 2-3 minutes.
- Add pasta, water, and spices to taste.
- Bring to boil. Let simmer until noodles are al dente. *
Serving This Yumminess
Dish out this deliciousness into individual bowls and add some fresh toppings. (See note in substitutions.)
Fresh toppings- Any Italian cheeses, fresh basil, fresh green onions or chives, sour cream or Greek yogurt.
Substitutions | Variations
*This soup can be served as soon as the noodles are finished cooking or this soup can simmer for several hours. But, WATCH OUT! Those noodles are going to become huge!
*Either way you choose to do this is fine! If gigantic noodles are not your kind of thing, then simply cook the pasta separately. You can dish the pasta out into separate bowls and pour the soup over the top just before serving.
Vegetarian Version- Substitute sausage for veggie crumbles.
