Oatmeal Energy Bites
Simple, Quick, and Healthy
Quick breakfast and snack options are not always healthy. Everything that comes from my kitchen will always be simple. This recipe is no exception to that.
I was putting together a month of simple and healthy breakfast ideas for busy mommas and knew I had to share the recipe for Oatmeal Energy Bites.
Here’s what I truly love about these Oatmeal Energy Bites.
1.| They take only a few minutes to make.
2.| My children can help make these in the kitchen.
3.| I can double or triple the batch and freeze for quick breakfast or snack options.
4.| Every time I make this simple recipe, I lick the bowl clean.
I’m one of those mommas who likes to get straight to the recipe without all that back story because I know how precious our time truly is. So, for you sister, I honor your time here by doing the same.
1/2 cup dry old-fashioned oatmeal
1/3 cup honey
1/2 cup PB (creamy or crunchy)
1 tsp pure vanilla extract
1 tbsp chia seeds
1 tbsp coconut flakes
1/3 cup slivered almonds
- Mix all ingredients in a large bowl. *Sometimes I warm the honey and peanut butter to make them easier to mix.
- Roll into balls.
- Place on parchment paper covered cookie sheet.
