Cauliflower Rice

I have to be honest, I have been absolutely reluctant to try cauliflower rice.  Friend, if this is you too, then you MUST read this and promise me that you will at least TRY this once in your life.

Layla (my middle child) and I have eliminated meat from our diets. I’ve also returned to using a FIXATE PORTION CONTROL that I loved while doing the 21 DAY FIX.  I’ve begun a SHIFT SHOP WORKOUT PROGRAM to help me to regain control over some hidden areas of indulgence in my life for truly running a HEBREWS 12 RACE.

I write all of that to say: I’m looking for more vegetables that can fill me up and not count as a yellow container.  I am also looking for a better source to round out our meals that is veggie based.

Enter: Cauliflower Rice

I’ve seen the posts and social media hype that’s praised cauliflower for this very reason.  Last weekend  I had one head of cauliflower that needed to be used and I thought, “Why not?  We need some new options.”

Friend, this is SOOOO easy.  My family ate their entire TACO BOWLS with CAULIFLOWER RICE.  As a matter of fact, we had enough leftover that 4/5 of us took these for lunch the next day.  That’s a #momvictory right?

This process to create cauliflower rice is so easy and took less than 10 minutes.  This also can be prepared on the weekend and stored in the refrigerator for several days or separated for meal prepping for the week.


Cauliflower Rice Recipe


  • 1 head washed cauliflower with stem removed
  • 1 tablespoon olive oil
  • Salt | Pepper to taste
  • 1/4 medium white onion chopped (optional)

Add-In Spice Possibilities

  • Cumin | Chili Powder
  • Lime | Garlic
  • Basil | Italian Seasoning
  • Green Onions | Chives
  • Curry | Ginger


  • Heat oil in large skillet or wok.
  • Meanwhile, use a food processor to chop cauliflower until it looks like rice.  (Yes, that’s how technical I get.)  *If adding onion you can add this into the food processor with the cauliflower.*
  • Dump the cauliflower rice into the skillet/wok and saute for 2-3 minutes until it begins to brown.
  • Add in spices of your choice depending upon the theme of your meal.

Meal Options

I prepared this for the first time last week with TACO BOWLS with CAULIFLOWER RICE.


The recipe was a hit with our family.  They noticed that it wasn’t quite the same rice that we normally use, but ate it all the same.  Since I’m a sneaky momma when it comes to feeding my family vegetables, I actually didn’t tell them until afterward that it was cauliflower rice.

As I continue to use cauliflower rice (and I definitely will), I will update and share these new creations with you!
